After a protein hit post workout? Then this mouth watering chia pudding is for you! Packed with juicy raspberries, coconut milk, vanilla and chia seeds this creamy pudding packs a protein punch. The star ingredient chia seeds provide 4.4 grams of protein per 28g serve.
- 4 tbsp of coconut yoghurt
- 400ml of coconut milk
- 1/3 cup of chia seeds
- 1 tbsp of cinnamon
- 1 tbsp of nutmeg
- 1 tsp of vanilla extract
- 8-10 fresh raspberries
- 1 banana mashed
- Optional sweetener – 1 tbsp of honey or 100% maple syrup or 6 pitted dates.
- Place all ingredients in a bowl and stir until combined
- Portion out into sealable containers and place in the frdige overnight (TIP: If you can’t wait you can add all ingredients into a blender, blend until smooth, portion out and let the pudding’s set in the fridge for 10 to 15 mins).
