4_Rasberry Vanilla Chia Pudding_1

After a protein hit post workout? Then this mouth watering chia pudding is for you! Packed with juicy raspberries, coconut milk, vanilla and chia seeds this creamy pudding packs a protein punch. The star ingredient chia seeds provide 4.4 grams of protein per 28g serve.

Ingredients:

  • 4 tbsp of coconut yoghurt
  • 400ml of coconut milk
  • 1/3 cup of chia seeds
  • 1 tbsp of cinnamon
  • 1 tbsp of nutmeg
  • 1 tsp of vanilla extract
  • 8-10 fresh raspberries
  • 1 banana mashed
  • Optional sweetener – 1 tbsp of honey or 100% maple syrup or 6 pitted dates.

Method:

  1. Place all ingredients in a bowl and stir until combined
  2. Portion out into sealable containers and place in the frdige overnight (TIP: If you can’t wait you can add all ingredients into a blender, blend until smooth, portion out and let the pudding’s set in the fridge for 10 to 15 mins).

Serves 4.
